With great respect for our traditions, with knowledge of the art of cheese-making, with an obsession for perfection, with persistence in maintaining proper procedures, with a desire for constant improvement and development, but most of all, with our love for food, we create the kind of cheese that we want to have at our table to serve to our friends and loved ones.

In the foothills of Mount Psiloritis, 30 kilometers from the town of Rethymno, lies the green valley of Amari with dozens of villages, endless olives groves and a rare natural wealth of more than 1,600 species of flora native to our region.

Goats and sheep graze freely on this special land to produce a unique milk which we collect each morning for our cheeses.
